COCHON 555 is a one-of-a-kind traveling culinary Swine-a-thon competition. “There are five chefs, five pigs, five winemakers and atasting event to promote sustainable farming of heritage breed pigs. The event challenges five local chefs to prepare a menu created from heritage breed pigs, nose-to-tail, for an audience of pork-loving epicureans.” SOBE 2012 394

CHICAGO’s Five Chefs include: Carlos Gaytan of Mexique, Danny Grant of RIA and Balsan, Stephanie Izard of Girl and the Goat, Mike Sheerin of Three Floyds and Jason Vincent of Nightwood. There will be treated an epic pork feast of five whole heritage pigs prepared by five chefs and wines from five family wineries, including Chase Cellars, Elk Cove, Buty, Yorba Wines and Scholium Project. The evening will also include wines from SALDO, Cornerstone and a blind tasting contest from Robert Kacher Selections.

You can watch a butcher demonstration from Rob Levitt of Butcher & Larder. Take your chance to win cookware through an interactive tasting contest with Andrew Zimmerman of Sepia and Le Creuset.  The event will include beers from Anchor Brew, tastings of Chinaco Tequila, Three Floyd’s. Enjoy a “Perfect Manhattan” from the Cochon 555 bar with Daniel Hyatt of Alembic SF featuring Templeton Rye, Hirsch, Angel’s Envy, Eagle Rare, Buffalo Trace, Hudson Whiskey’s Baby Bourbon and Luxardo. Kevin Hickey of recently opened Allium at the Four Seasons Chicago serves a Heritage BBQ whole hog family meal.

“Over the past 20 years the New Orleans Wine & Food Experience has raised more than $1 million for non-profit organizations, while showcasing local food and chefs, and national and international wines.  This year in an effort to fight hunger and support culinary education, the 2012 beneficiaries will share 100% of the proceeds. Second Harvest Food Bank of Greater New Orleans and Acadiana will receive 40% and the following will share the remaining 60%: the Louisiana Restaurant Association Education Foundation’s ProStart Program, Delgado Culinary Arts School, New Orleans Center for the Creative Arts’ Culinary Program, the John Folse Culinary Institute and the Edible Schoolyard New Orleans.”

Robert  has worked in Fiji, New York City, Miami, Sydney, Las Vegas, the US Virgin Islands, Barbados, St Lucia and Trinidad.

Another celebrity chef that is participating in the extravaganza is Manu Feildel. Manu is known for his participation in Australia’s cooking competitios like Ready Steady Cook, Masterchef Australia and My Kitchen Rules. He was the head chef at Bilson’s before opening his own restaurant, Manu at L’Etoile, in 2009. He also won Dancing with the Stars 2011.

The Fiji Festival will have dinners hosted by celebrity chefs each evening and Master Classes and cooking demonstrations with a daily happy hour and evening entertainment.

Park Hyatt Masters of Food & Wine: Global Wine and Food Events

The Park Hyatt Masters of Food & Wine Program is a series of Global Food and Wine Events. These culinary weekend workshops are available at Park Hyatt hotels. Park Hyatt chefs and sommeliers lead masters-in-training  quarterly classes. Park Hyatt Masters events take place on the following dates:  January 13-15; March 23-25; June 22-24 and September 21-23, 2012.

Here’s how it works. The Park Hyatt chefs and sommeliers lead masters-in-training seminars in different types of

“hands-on courses” on the designated day:

(1) In the Field: Interaction with artisanal food or beverage purveyors

(2) In the Kitchen: Onsite cooking, prep workshops, and specialty tastings and

(3) In the Moment: Tips on service and presentation.

Here’s a list of some of the activities from the website:

Park Hyatt Maldives will host a fishing excursion led by the hotel’s Executive Chef and resident Marine Biologist. The following day, guests will collect local produce on a farm on a nearby island. After returning to the resort, they will learn regional cooking techniques and will enjoy a traditional Maldivian meal prepared with the fresh ingredients caught and collected.

Park Hyatt Washington will host a local microbrew tasting with the brew masters at PortCity Brewing Company, a winter tea blend tasting with Certified Tea Master Rodrick Markus, and an intimate cooking class with Blue Duck Tavern Chef de Cuisine John Melfi highlighting the season’s best ingredients.

Park Hyatt Abu Dhabi will host an excursion to a local date farm. Following the excursion, guests are invited to a cooking class led by the culinary team where they will learn to prepare the region’s famous hot and cold mezza as well as delicious Arabic sweets.

Park Hyatt Beaver Creek is partnering with ski legend Chris Anthony and Silver Oak Cellars to host a weekend of great skiing, delicious food, and decadent wine. Après-ski, enjoy tasty Colorado cuisine prepared by 8100 Mountainside Bar & Grill’s Executive Chef, Christian Apetz, and a reserve wine tasting led by Silver Oaks.

Park Hyatt Chicago will hosts an evening of wine, beer and a variety of Judy’s Goat Cheeses on March 23, 2012.  Participants will experience a behind-the-scenes kitchen tour and interactive cheese and wine/beer tasting in our Wine Cellar.

Atlanta Food and Wine Festival 2012 in Georgia

Attend the Atlanta Food & Wine Festival 2012 from May 10th to the 13th in Midtown, Atlanta Georgia.

Atlanta is a vibrant cultural, economic, and culinary powerhouse. This is the home of the The Coca Cola Company and the Home Depot Empires. There are plenty of intersting sites in Atlanta, Georgia. I love the Georgia State Capitol Building.

The city is home to a plethora of high-end chef-driven restaurants in Atlanta’s neighborhood including: Bocado, Bacchanalia, Flip Burger Boutique, and Miller Union in West Midtown, Empire State South in Midtown and Two Urban Licks and Rathbun’s on the east side. On Buford Highway,  from Buckhead to Gwinnett County, Atlanta has plenty of international food and ethnic restaurants including Vietnamese, Indian, Cuban, Korean, Mexican, Chinese and Ethiopian.
